Cauliflower Mashed Potatoes

So most of you (if you follow my blog)  will know that I have been dieting and working out.  I have been trying to eat healthier.  My biggest weaknesses is potatoes and pasta.  A good friend of mine mentioned to steam Cauliflower to make "fake" mashed potatoes.    I was a little leery at first.  I wanted to have this made before David got home from work.  He does not like cauliflower and I wanted to see if I could fool him.  After picking up Alyssa from school, we headed to the grocery store and picked up cauliflower.
I cut the stems off and just steamed the head(tree part) of the cauliflower. 
After steaming until mushy I pulled out my mixer.  I added a little butter(low fat of course) and a splash of milk.  Added some salt and pepper and TADA!  Mashed Potatoes(or so they thought)

Everyone ate supper.  The kids loved it, I loved it, and even David loved it.  I did not tell them until after we finished that it was not potatoes, but cauliflower.  Every time I cook now, the kids ask for flower.  I am please that they actually like one of my healthy substitutes.  Try it on your family some time and see if they notice a difference.  If you have any healthy recipes to share, please do so!!!!
