I cut the stems off and just steamed the head(tree part) of the cauliflower.
After steaming until mushy I pulled out my mixer. I added a little butter(low fat of course) and a splash of milk. Added some salt and pepper and TADA! Mashed Potatoes(or so they thought)
Everyone ate supper. The kids loved it, I loved it, and even David loved it. I did not tell them until after we finished that it was not potatoes, but cauliflower. Every time I cook now, the kids ask for flower. I am please that they actually like one of my healthy substitutes. Try it on your family some time and see if they notice a difference. Ok ive heard of this but never tried it. I'm a mashed potatoes lover so ill try it. Will get back with ya!
